  1. 1-1/3 cups graham cracker crumbs

  2. 1-1/4 cups all-purpose flour

  3. 1/2 cup sugar

  4. 1 teaspoon baking powder

  5. 3/4 teaspoon baking soda

  6. 1/4 teaspoon salt

  7. 1 egg

  8. 1 cup milk

  9. 1/3 cup vegetable oil

  10. 1/2 cup chopped pecans

  1. In a large bowl, combine the first six ingredients. In another bowl, beat the egg, milk and oil; stir into dry ingredients just until moistened. Fold in pecans. Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen.
