  1. 2 Eggs

  2. 3/4 cup 148g / 5 1/5oz Sugar

  3. 2/3 cup 157ml Honey

  4. 3/4 cup 69g / 2.4oz Sliced almonds

  5. 2 1/2 cups 156g / 5 1/2oz Flour - sifted

  6. 1/2 teaspoon 2 1/2ml Cinnamon

  7. 1/2 teaspoon 2 1/2ml Ginger

  8. 1/2 teaspoon 2 1/2ml Nutmeg

  9. 1/4 teaspoon 1 1/3ml Baking soda

  10. 1/2 cup 73g / 2.6oz Chopped candied fruit peel

  1. Beat the eggs and sugar together until fluffy. Beat in the honey and then the nuts. Sift together the flour, cinnamon, ginger, nutmeg and baking soda. Work into the honey mixture and add the candied fruit. Form into a ball and chill.

  2. Roll out as thin as possible and cut into shapes. Place on a greased cooky sheet.

  3. Bake in a 350 degree oven 15 minutes or until browned. Makes about 36 three-inch cookies.
