  5. 1/2 c Pineapple juice concentrate

  6. 1/3 c Apple juice concentrate

  7. 1/4 c Margarine

  8. 1/2 ts Vanilla extract

  9. 2 c Whole wheat flour

  10. 2 ts Baking powder

  11. 1 ts Baking soda

  12. 1/2 c Crushed pineapple

  13. -- (well drained)

  14. 1 1/2 c Coconut milk

  15. 3 tb Arrowroot

  16. 1/4 c Pineapple juice concentrate

  17. -- (frozen)

  18. 1 1/2 c Crushed pineapple

  19. 1 tb Arrowroot

  20. Unsweetened shredded coconut

  21. Get all ingredients out so they can come to room temperature.

  22. 350F and oil an

  23. 8 or 9 cake pan.

  24. Blend first 5 ingredients together in a blender until smooth. Pour

  25. into mixing bowl and sift next 3 ingredients on top of blended

  26. mixture. Beat dry ingredients in well till all lumps are gone -- but

  27. no longer. Be careful not to overmix. Fold pineapple into batter and 40 to 45 minutes, till a toothpick

  28. inserted in the middle comes out clean. Remove from oven and allow to

  29. sit in cake pan for about 15 minutes before turning onto a cooling

  30. rack. Sprinkle entire surface of warm cake with shredded coconut and allow to cool.

  31. While cake is baking, mix coconut milk and arrowroot in a saucepan

  32. till arrowroot dissolves. Put pan on heat and stir constantly till

  33. mixture boils and thickens. Add juice concentrate and stir in,

  34. continuing till mixture re-boils and thickens. Remove from heat and cool. Do the same in a separate pot with crushed pineapple and arrowroot.

  35. When cake, thickened pineapple and thickened coconut milk are cooled,

  36. split cake in half so you have two layers. Spread thickened coconut

  37. milk over entire surface of cake like an icing. Sprinkle entire

  38. surface with shredded coconut and refrigerate till serving time.
