  1. 4 Ripe tomatoes - chopped - (6 cups) (large)

  2. 2 Celery stalks - diced (large)

  3. 1 Green bell pepper - diced (large)

  4. 1 Onion - diced (large)

  5. 1/2 cup 118ml Cider vinegar

  6. 2 tablespoons 30ml Sugar

  7. 2 teaspoons 10ml Mustard seed

  8. 1 teaspoon 5ml Tabasco brand Pepper Sauce

  9. 1 teaspoon 5ml Salt

  1. In 4-quart saucepan, bring all ingredients to a boil. Reduce heat to low; cover and simmer 15 minutes. Uncover saucepan and simmer 45 minutes longer, stirring occasionally until mixture has thickened slightly. Spoon into clean jars. Cover and store in refrigerator up to 1 week.

  2. This recipe yields 3 1/2 cups.
