  2. 1/2 c White vinegar

  3. 1/4 ts Salt

  1. Wash horseradish roots thoroughly and remove the brown, outer skins.

  2. (A vegetable peeler is useful in removal of outer skin.

  3. ) The roots may be grated, or cut into small cubes and put through a food chopper or a blender.

  4. Combine ingredients.

  5. Pack into clean jars.

  6. Seal tightly.

  7. Store in refrigerator.
