  2. WHITE CHOCOLATE-COFFEE TRUFFLES

  6. 3/4 c Whipping cream

  7. 1 tb Instant espresso or coffee

  8. -powder

  9. 14 oz White chocolate, very finely

  10. 2 tb Kahlua

  11. Dipping chocolate:

  12. 1 lb White chocolate, very finely

  13. -chopped

  14. 2 ts Vegetable oil

  15. 3 tb Chocolate-covered coffee

  16. -beans, very finely chopped

  17. 1. To make the truffles: In a medium saucepan, bring

  18. the cream and espresso powder to a boil. pour over

  19. the chocolate and whisk until completely melted.

  20. whisk in the Kahlua. Refrigerate until completely

  21. chilled and firm.

  22. 2. With a tsp, place pieces of the chocolate onto a

  23. foil-lined baking sheet. Refrigerate to firm; roll

  24. into balls and refrigerate again for about 30 minutes.

  25. 3. To prepare the dipping chocolate: In the top of a

  26. double boiler set over hot water, place the chocolate

  27. and oil. stir until almost melted. Remove the top of

  28. the double boiler from the heat and stir until the

  29. chocolate has completely melted. continue to stir

  30. until the chocolate has cooled and reaches a

  31. temperature of 90 degrees.

  32. 4. Prepare 2 baking sheets by lining with aluminum

  33. foil. Dip each candy center in the melted chocolate,

  34. shake off the excess and place on the baking sheet.

  35. When you have dipped a row of candies, top each with a

  36. little of the chocolate- covered coffee bean. Before

  37. each dipping, stir the chocolate vigorously with your

  38. fingers. If the centers become too soft, chill for about 30 minutes.

  39. 5. Let the candies set for about 2 hours before

  40. storing in refrigeration. If the centers start to come

  41. through the bottoms of the chocolates, as often

  42. happens with soft mixtures, dip the bottoms again in

  43. melted and cooled chocolate.
