  1. 2 (10-ounce) packages frozen chopped spinach , thawed

  2. 2 (8-ounce) packages cream cheese, softened

  3. 2 cups shredded Monterey Jack cheese

  4. 1 cup freshly grated Parmesan cheese

  5. 1 small onion , chopped

  6. 1 (14-ounce) can artichoke hearts, drained and chopped

  7. 1 (10-ounce) cans diced tomatoes and green chile s, drained

  8. 2 teaspoons ground cumin

  9. 2 teaspoons chili powder

  10. 1 teaspoon garlic powder

  1. Drain spinach; press between layers of paper towels to remove excess moisture. Combine spinach, cream cheese, and remaining ingredients, stirring well. Spoon mixture into a greased 2½-quart baking dish. Bake, uncovered, at 350 degrees for 30 minutes or until bubbly. Serve with melba toast rounds or corn chips.
