  1. Recipe Instructions Preheat oven to 400 degrees. Grease two cookie sheets. Bring water to a boil in a medium saucepan. Add 1/2 cup butter. Meanwhile, saute onions in remaining 1/4 cup butter until wilted, about 5 minutes. Set aside. When butter has melted in water and mixture has returned to a boil, add salt and flour. Reduce heat to low; stir for a few minutes, until mixture makes a ball and pulls away from the sides of the pan. Remove from heat. Beat in the eggs, 1 at a time, mixing well after each addition. Combine 1 cup cheese with dough. Add onions, mixing thoroughly. Drop heaping tablespoons of dough onto greased cookie sheet. Brush tops with milk; sprinkle with additional Parmesan cheese. Bake until golden and puffy, about 35 to 40 minutes. Yields 24 puffs.
