  1. 6 2 1/2 quarts/2 1/2 liters water

  2. 1 tbsp salt

  3. 1 lb/500 g finely ground cornmeal

  4. 1/2 cup/125 g butter, melted

  5. 1 1/4 cups/150 g freshly grated

  6. Parmesan cheese

  1. Method :

  2. Bring the water to a boil with the salt in a large pot.

  3. Gradually sprinkle in the cornmeal, stirring constantly with a wooden spoon, to prevent lumps from forming.

  4. Continue cooking over low heat for 45-50 minutes, stirring almost constantly.

  5. Preheat the oven to 400°F/200°C/gas 6. Turn the polenta onto a board and slice thickly.

  6. Arrange the slices in layers in a baking dish. Pour the melted butter over the top and sprinkle with the Parmesan.

  7. Bake for 8-10 minutes, or until golden. Serve hot.
