  1. 400g caster sugar

  2. 375g plain flour

  3. 2 teaspoons bicarbonate of soda

  4. 1/2 teaspoon salt

  5. 45g unsweetened cocoa powder

  6. 475ml water

  7. 250ml vegetable oil

  8. 2 tablespoons vinegar

  9. 1 teaspoon vanilla extract

  1. Preheat the oven to 180 C / Gas 4. Lightly grease a 20x30cm tin.

  2. In a large bowl, mix sugar, flour, bicarb, salt and cocoa.

  3. Add water, vegetable oil, vinegar and vanilla. Beat by hand until smooth.

  4. Pour into the prepared tin. Bake at 180 C / Gas 4 for 40 minutes, or until skewer inserted into centre of cake comes out clean.
