  7. 5 ounces Tarama (cod roe)

  8. 3/4 pound Cold mashed potatoes

  9. 1 1/2 cups Best olive oil

  10. 2 tablespoons Lemon juice -- or to taste

  11. 1 tablespoon White vinegar -- or to taste

  12. Parsley -- chopped

  13. Blend the tarama in a mixer or blender with a little of the oil for a few

  14. minutes. Add the potatoes and mix well. Add the oil alternately with the lemon

  15. juice and vinegar, blending constantly, until the mixture becomes a thick

  16. smooth paste. Garnish with parsley and serve in a bow.

  17. NOTE: You can vary the amounts of tarama and potatoes to make a paste to
