  1. 2-1/2 cups reduced-sodium tomato juice

  2. 3 tablespoons white vinegar

  3. 3 tablespoons olive oil

  4. 2 garlic cloves, minced

  5. 1/4 teaspoon salt

  6. 2 to 3 drops hot pepper sauce

  7. 4 large tomatoes, chopped and divided

  8. 1 medium onion, chopped

  9. 1 medium cucumber, peeled, seeded and chopped

  10. 1 medium green pepper, chopped

  11. 1/4 cup fat-free croutons

  1. In a blender, combine the tomato juice, vinegar, oil, garlic, salt, hot pepper sauce and half of the tomatoes; cover and process until smooth. Transfer to a bowl. Add the onion, cucumber, green pepper and remaining tomatoes. Cover and refrigerate for 4 hours or until chilled. Garnish with croutons. Yield: 4 servings.
