  1. 4 ounces sliced Genoa salami

  2. 2 bags (10 ounces each) ready-to-serve Italian salad green mix or romaine lettuce

  3. 1/2 cup pitted black olives, such as Gaeta or Kalamata

  4. 1/2 cup thinly sliced red onion (from the salad bar)

  5. 1/2 cup green pepper rings or strips (from the salad bar)

  6. 1/4 cup Italian salad dressing, homemade or storebought

  7. 1/2 cup prepared croutons

  8. Cut the 4 ounces Genoa salami into julienne strips.

  9. 8 ounces grated smoked mozzarella

  10. 1 teaspoon chopped fresh thyme or 1 teaspoon chopped fresh oregano or 1/2 teaspoon dried

  11. 2 garlic cloves

  12. 1/2 cup ricotta cheese

  13. 1/4 cup mascarpone

  14. Salt and freshly ground black pepper

  15. 1 large Boboli pizza shell

  16. 1 tablespoon olive oil

  17. Preheat the oven to 450Â degrees F.

  1. Step 1: preheat the oven to 450 degrees; make the salad In a large wooden or glass salad bowl, combine the 20 ounces salad greens, the salami strips, 1/2 cup each of olives, red onion slices, and peppers rings. Reserve.

  2. Step 2: make the pizza Grate the smoked mozzarella; if using fresh herbs, chop enough thyme and oregano to measure 1 teaspoon each. Chop the 2 garlic cloves. In a small bowl, blend the 1/2 cup ricotta and 1/4 cup of mascarpone together well, and season with salt and plenty of ground black pepper Place the pizza shell on a large baking pan and brush it with the 1 tablespoon olive oil; with a spatula, spread the ricotta mixture evenly over the shell. Sprinkle the grated smoked mozzarella over the top, then scatter the 1 teaspoon each of fresh herbs and the 2 chopped garlic cloves over the mozzarella.

  3. Bake the pizza for 15 minutes, or until hot and bubbly. Remove the pizza from the oven and let it rest a minute of two before cutting into wedges.

  4. Step 3: serve Toss the salad with the 1/4 cup salad dressing and sprinkle the 1/2 cup croutons over the top. Place the salad bowl on the table.

  5. At serving time, with a pizza cutter or a heavy, sharp knife, cut the pizza into 8 slices and place 2 slices on each serving plate.

  6. For dessert, scoop the ice cream into each of 4 bowls and serve the butter cookies on the side
