  2. Title: Thick oxtail and lentil stew

  5. 2 Oxtails, cut 2 tb Flour

  6. 2 tb Vegetable oil

  7. 6 c Water

  8. 1/2 ts Peppercorns

  9. 1/2 ts Juniper berries

  10. 2 Bay leaves

  11. 1 Garden thyme

  12. 2 Garlic cloves

  13. 1/2 c Green lentils

  14. 3 ts Salt

  15. 1 lg Carrot

  16. 1 sm Turnip

  17. 2 Onions

  18. 2 Celery stalks

  19. Parsley for garnish

  20. Roll oxtails in flour, then brown all over in a saucepan in the oil.

  21. Add water and bring to the boil with the lid on. Add peppercorns,

  22. juniper berries, bay leaves, thyme, garlic, lentils and salt. Lower

  23. heat, cover and simmer for 2 hours, skimming off the fat as it rises

  24. to the surface. Add all the vegetables and simmer for another hour.

  25. Sprinkle chopped parsley over each helping. Serve with steaming hot

  26. boiled potatoes.
