  1. 6 large, peach es, peeled and sliced--about 7 cups 1 1/2 c fresh or frozen berries

  2. 2 T corn starch

  3. 1 cup sugar

  4. 1 tsp vanilla

  5. 1/2 tsp cinnamon Topping

  6. 3 cups flour

  7. 1 1/2 tsp salt

  8. 2 T sugar

  9. 1 T baking powder

  10. 10 T chilled butter

  11. 3/4 to 1 cup buttermilk

  12. 1 egg yolk

  13. 1 tsp milk

  1. Heat oven to 375°. Mix peaches and berries with cornstarch, sugar, vanilla and cinnamon. Transfer to shallow 2 qt. baking dish. Bake for 40 minutes, stirring several times. Sift together flour, salt, sugar and baking powder. Cut butter into ½" cubes. Add to dry ingredients. Cut butter flour mixture until it looks like crumbs. Mix in buttermilk. Gather dough into a ball. If dough is too dry, add more liquid until you can gather it together. On lightly floured surface, roll out dough to ¾’ thickness. Cut out 8 biscuits. Remove fruit from oven and top with biscuits. Mix egg yolk and milk and brush over tops of biscuits. Return to oven and bake for 25-20 minutes until biscuits have browned on top and cooked through. Serve warm with vanilla ice cream.
