  1. Frank And Potato Bake 1/4 cup finely chopped onion

  2. 1 tablespoon margarine or butter

  3. 1 tablespoon all purpose flour

  4. 1/2 teaspoon salt

  5. 2/3 cup reconstituted nonfat dry milk or milk

  6. 3/4 cup (3 oz) shredded American cheese or process cheese spread

  7. 1 tablespoon snipped parsley

  8. 2 teaspoons prepared mustard

  9. 8 ounces frankfurters, sliced, (4 or 5)

  10. 4 medium potatoes, cooked, peeled, and sliced

  11. snipped parsley, optional

  12. In small saucepan cook onion in margarine or butter till tender

  13. but not brown. Blend in flour and salt. Add milk all at once; cook

  14. and stir over medium heat till thickened and bubbly. Add shredded

  15. cheese, stirring to melt.

  16. Stir in 1 tablespoon snipped parsley and the mustard. Fold in sliced

  17. frankfurters and potatoes; turn into a 1 quart casserole. Cover

  18. 350 oven about 35 minutes or till heated through.

  19. Garnish with additional snipped parsley, if desired. Serves 4.
