  1. 2 slices bacon , cut cross-wise into 1/4 in. pieces 2 lbs. ground beef chuck

  2. 1 onion , chopped

  3. 3 garlic cloves, chopped

  4. 2 Tbls. paprika

  5. 1 1/2 tsp. ground cumin

  6. 1 1/2 tsp. dried oregano

  7. 1/2 tsp. cayenne pepper salt

  8. 3 C. water

  9. 2 Tbls. masa flour

  10. 1 1/2 Tbls. cider or other vinegar Toppings: onion, cheddar cheese, sour cream, fresh lime wedges, chopped jalepeno, chilis

  1. In a covered pot, cook bacon over medium heat until just beginning to brown, about 4 minutes. Add beef, onion, garlic, paprika, cumin, oregano, cayenne and 1¼ tsp. salt. Cook stirring occasionally and breaking up meat with the side of the spoon, about 10 minutes. Stir in water, masa and vinegar, and bring to a boil. Reduce heat; simmer, stirring occasionally, until liquid thickens about 20 minutes. If chili is dry, add a bit of water to make it soupy again. Serve with bowls of toppings and corn bread or tortilla chips.
