  1. 4 pounds beef roast sirloin tip, rump, round bone chuck, preferably boneless

  2. 1 1/2 cup vinegar

  3. 1 cup cola

  4. 3/4 cups water

  5. 3 each onions sliced

  6. 2 each celery stalks sliced

  7. 2 each carrots sliced

  8. 10 each black peppercorns

  9. 10 each cloves, whole

  10. 3 each bay leaves

  11. 2 tablespoons sugar

  12. 1 1/2 teaspoon salt

  13. 1 x flour, all-purpose

  14. 3 tablespoons vegetable oil or shortening

  15. 3 cups drippings plus strained marinade

  16. 5 tablespoons flour, all-purpose

  17. 5 tablespoons gingersnap crumbs*

  1. Two to four days before serving, wipe the meat with a damp cloth, then place in a large plastic bag.

  2. In a large bowl, thoroughly combine the vinegar, Coca-Cola, water, onions, celery, carrots, pepper, cloves, bay leaves, sugar, and salt and pour over meat.

  3. Fasten bag tightly and lay flat in a 13x9 inch pan.

  4. Refrigerate, turning bag each day. (If you like a sour sauerbraten, let meat marinate 4 days.

  5. ) When ready to cook, remove meat (saving marinade) and dry well.

  6. Rub the surface lightly with flour. In Dutch oven , heat oil or shortening and slowly brown the meat well on all sides.

  7. Add 1 cup of the marinade liquid plus some of the vegetables and bay leaves.

  8. Cover tightly and simmer on surface heat or in a preheat, 350 F oven for 3 to 4 hours until the meat is fork-tender.

  9. If needed, add more marinade during cooking to keep at least 1/2 inch liquid in the Dutch oven .

  10. Remove the meat and keep warm until ready to slice.

  11. Into a large measuring cup, strain the drippings.

  12. Add several ice cubes and let stand a few minutes until the fat separates out.

  13. Remove fat, then make gravy.

  14. TO MAKE THE GRAVY: In the Dutch oven , combine the gravy ingredients, stir and cook about 5 minutes over medium heat until gravy is thickened.

  15. Taste for seasonings.

  16. Makes 3 cups of gravy.

  17. Makes 8 servings.
