  1. 3 tablespoons ghee (clarified butter)

  2. 1 medium onion chopped

  3. 1/2 teaspoon turmeric

  4. 2 each bay leaves

  5. 4 each cloves

  6. 4 each black peppercorns

  7. 2 each cinnamon sticks

  8. 1 inch each 2 each cardamom pods black

  9. 2 cups rice brown, presoaked

  10. 3/4 cup water

  11. 3 tablespoons green peas

  12. 1 teaspoon salt

  13. 1 pinch saffron*

  1. Heat ghee in a skillet.

  2. Saute onion over a medium heat till golden.

  3. Reserve some of the onion for garnishing later.

  4. Add turmeric to the skillet.

  5. Stir and heat briefly.

  6. Add the rest of the spices in order.

  7. Mix well.

  8. Add the rice and stir a few times.

  9. Pour over water, stir and bring to a boil.

  10. Reduce heat, mix in peas and salt, cover and cook for 10 to 15 minutes.

  11. Sprinkle with saffron and reserved sautéd onion.

  12. Serve hot.
