  6. 1 lb Pork butt

  7. - cut into 1-in pieces

  8. 4 oz Bacon -- cut into 1-in pieces

  9. 1 sm Onion -- finely diced

  10. 1 tb Chopped fresh sage -- -ÿÿ

  11. 1 1/2 ts -Dried Sage

  12. 1 t Minced garlic

  13. 1/2 ts Salt

  14. 1/2 ts Ground white pepper

  15. 3/4 ts Mace

  16. 3/4 ts Ground coriander

  17. 2 Oranges -- zest only

  18. 2 tb Unsalted butter

  19. COMBINE ALL INGREDIENTS except butter. If using a meat

  20. grinder, fit it with a medium die. If using a food

  21. processor, put only a small quantity in the work bowl

  22. at a time and pulse carefully so the mixture doesn't

  23. turn into a paste. Repeat until all mixture is ground;

  24. then mix the separate batches together well. Form the

  25. ground meat into patties. To cook the sausage, melt

  26. the butter in a large skillet over medium heat on the

  27. 2-to-

  28. 3 minutes on each side.
