  2. ZUCCHINI AND LEMON PIE

  6. 1 Pie crust -- unbaked

  7. Zucchini filling

  8. 3 sm Zucchini -- thinly sliced

  9. 2 tb Butter

  10. 1/2 ts Caraway seed

  11. 1 t Lemon rind -- grated

  12. 2 tb Sugar

  13. 2 tb Lemon juice

  14. Custard

  15. 6 tb Butter

  16. 2/3 c Sugar

  17. 2 Whole eggs

  18. 2 Egg yolks

  19. 2 tb Flour

  20. 1/4 c Lemon juice

  21. 400 degrees. Melt the

  22. tablespoons of butter in a skillet and saute the

  23. zucchini and remain filling ingredients over high heat

  24. until the zucchini loses it color. Place in the pie

  25. shell and bake for 15 minutes. Then reduce the oven

  26. temperature to 375 dregees. While this is baking make

  27. the custard by creaming the 6 tablespoons of butter

  28. 2 whole eggs and 2 extra egg

  29. yolks alternately with the flour and mix well. Then

  30. add the lemon juice, don't worry if it looks funny.

  31. Pour the custard over the zucchini and bake for and additional 35 minutes.
