  1. 1 cup 62g / 2 1/5oz Cornmeal

  2. 5 cups 312g / 11oz Green tomatoes - in

  3. 1/4" to

  4. 3/8" (medium) slic

  5. 1/2 cup 118ml Vegetable oil - or bacon fat

  6. Salt and freshly ground pepper

  7. 6 sections Cilantro - optional

  1. Sprinkle cornmeal on a piece of wax paper or a large flat plate. Dip each tomato slice into cornmeal and pat gently until cornmeal covers the surface; turn slice over and coat the other side.

  2. Heat the oil in a large skillet over medium heat. Add tomato slices, and fry in one layer, without crowding, for 2 to 3 minutes on each side, until golden brown.

  3. Season with salt and pepper to taste. Serve hot, garnished with sprigs of cilantro.
