  1. 125g plain flour

  2. 60g firm butter

  3. 60g grated tasty cheddar cheese

  4. 1 egg yolk Pinch of cayenne pepper

  1. Pre- heat oven to 200C. Rub butter into flour and cayenne pepper in food processor. Add grated cheese and process for 10 seconds on high. Add egg yolk and mix. Remove from processor and add a tablespoon or so of cold water if necessary to form a firm ball. Roll out and cut into approx.

  2. m strips about 10 cm long. Cook on greased trays for about 7 minutes or until golden. (Watch closely after 7 mins as they turn form golden to burnt very quickly!).
