  1. 1 Family Sized package Barilla Cheese and Spinach Tortellini

  2. 2 tablespoons extra virgin olive oil

  3. 1 cup white onion , finely diced

  4. 1 cup carrots , diced

  5. 1 cup zucchini , diced

  6. 2 cups eggplant , diced

  7. 1 cup tomato , diced

  8. 1/8 teaspoon black pepper

  9. 1/2 teaspoon fresh marjoram , chopped

  10. salt (to taste )

  1. Steps:

  2. Cook Barilla Tortellini according to directions on package.

  3. Meanwhile, sauté onion and carrots in oil for 2 minutes in a large skillet over medium heat.

  4. Add zucchini and eggplant; cook for additional 2 minutes.

  5. Drain Tortellini and mix with vegetable combination in skillet.

  6. Stir in tomatoes and serve.

  7. *Substitute fresh marjoram with ¼ teaspoon dried marjoram.
