  6. 1/2 lb Almonds (blanched),

  8. 1 ts Almond extract

  9. 2 c Rice, cooked

  10. 1/3 c Sugar

  11. 1/4 c Raisins or currants

  12. Heat milk just to simmering in a large saucepan. Add

  13. all the ingredients; stir until well mixed. Cook over

  14. 3 to 5 minutes.

  15. Serve hot as is traditional for Christmas, or chill

  16. before serving.

  17. NOTES:

  18. Almond Soup -- This recipe could be used as part of

  19. a 12-course meal known in Polish as Wigilia, or on its

  20. own. Wigilia is eaten after sundown on Christmas Eve.
