  2. SCOTTISH GINGER CAKE

  6. 3 c All-purpose flour

  7. 1/2 ts Salt

  8. 2 ts Baking soda

  9. 1 tb Ground ginger

  10. 1/3 c Golden raisins

  11. 1/3 c Chopped mixed candied peel

  12. 1/3 c Crystallized ginger, chopped

  13. 3/4 c Molasses

  14. 3/4 c Butter

  15. 1/3 c Packed brown sugar

  16. 3 Eggs, beaten

  17. 2 tb To 3T milk

  18. A rich cake, this improves with keeping in an airtight

  19. tin. Very nice served with tea.

  20. Preheat oven to 325F (165C). Generously grease an

  21. 8-inch square baking pan; set aside. Sift flour,

  22. salt, baking soda and ground ginger into a large bowl.

  23. Stir in raisins (plump then in some sherry or water

  24. before using), candied peel and cystallized ginger;

  25. set aside. In a medium-size saucepan, combine

  26. molasses, butter and brown sugar. Stir over low heat

  27. until butter is melted. Remove from heat. Beat in

  28. eggs and milk. Make a well in center of reserved dry

  29. ingredients. Pour in molasses mixture and beat

  30. thoroughly. Pour into cake pan. Bake 1 1/4 hours, or until top springs back when lightly touched with
