  1. 2 lbs fresh asparagus spears trimmed

  2. 1/2 cup of Garlic Ceasar Salad Dressing or Creamy Garlic Salad Dressing

  3. 4 Tbsp Grated Parmesan cheese

  4. 1/2 cup crushed Ritz type of crackers (about 12 crackers)

  1. Preheat oven to 350 degrees F. Cook asparagus in simmering water in a large skillet about 3 minutes or until they are bright green but still crisp. Drain. Toss together the asparagus with the 1/2 cup of dressing in an oil coated ( I use Pam Spray) 9 X 13 baking dish. Sprinkle with the parmesan cheese and top with crushed crackers. Bake for 15 minutes or until cheese is lightly browned and mixture is heated through. Yield: serves 8 Notes: If you want to lighten up this recipe, look for a light or fat free type of creamy ceasar dressing. To lighten it up either further, you can always use reduced fat Ritz type crackers.
