  7. -CRUST:

  8. 1 1/4 c Graham Cracker Crumbs

  9. 2 tb Sugar

  10. 1/4 c Butter; or margarine; melted

  11. --FILLING--

  12. 1 ts Lime Rind; grated

  13. 24 oz Cream Cheese; SOFTENED

  14. 3/4 c Sugar

  15. 3 Eggs

  16. 1 tb Lime rind; grated

  17. 1/4 c Key Lime Juice

  18. 1 ts Vanilla Extract

  19. 2 c Sour Cream

  20. 3 tb Sugar

  21. 1 Fresh Strawberries; optional

  22. 1 Lime slices; Optional

  23. Combine crust ingredients and stir well. Press crumb

  24. mixture evenly over bottom and up sides of a 9-inch

  25. 350 degrees for 5 to

  26. minutes. Let cool.

  27. Beat cream cheese until light and fluffy; gradually

  28. add 3/4 cup sugar; beating well. Add eggs, one at a

  29. time, beating well after each addition. Stir in lime

  30. rind, juice and vanilla. Pour mixture into prepared

  31. 375 degrees for 45 minutes, or until set.

  32. Combine sour cream and 3 tablespoons sugar; stir well

  33. and spread evenly over cheesecake. Bake at 500 degrees

  34. for 5 minutes. Let cool to room temperature on a wire

  35. rack; chill at least 8 hours. To serve, carefully

  36. remove sides of springform pan. If desired, garnish

  37. with strawberries and lime slices. Yield: one 9-inch

  38. cheesecake.
