  1. 36 ladyfingers

  2. 9 ounces mascarpone cheese

  3. 2 egg yolks

  4. 2 egg whites

  5. 4 tablespoons white sugar

  6. 3 tablespoons rum

  7. 4 tablespoons milk

  8. 1 cup strong brewed coffee

  9. 1/8 teaspoon unsweetened cocoa powder

  1. Mix together the milk, coffee, rum and sugar. Soak lady fingers in the coffee mixture. Layer 1/2 of the soaked ladyfingers in the bottom of a 9x13 inch pan. Beat together egg yolks and 2 tablespoons sugar. Add the mascarpone cheese and 1 tablespoon of rum; mix well. Whip egg whites until stiff peaks form; fold into mascarpone cheese mixture. Spread 1/2 of mixture over soaked lady fingers. Cover with second half of soaked lady fingers and cover evenly with remaining mascarpone cheese mixture. Sprinkle with cocoa powder. Refrigerate at least 3 hours.
