  2. 1 tablespoon(s) fresh parsley , chopped

  3. 1/2 teaspoon(s) freshly grated lemon peel

  4. 1/2 teaspoon(s) salt

  5. 1/8 teaspoon(s) coarsely ground black pepper

  6. 1 1/2 pound(s) (small)

  7. red potatoes , cut in half

  1. Preheat oven to 450 degrees F. In 3-quart saucepan, melt butter with parsley, lemon peel, salt, and pepper over medium-low heat. Remove saucepan from heat; add potatoes and toss well to coat.

  2. Place potato mixture in center of 24-inch by 18-inch sheet of heavy-duty foil. Fold edges over and pinch to seal tightly.

  3. Place package in jelly-roll pan and bake until potatoes are tender (when they can be pierced, through the foil, with a knife), about 30 minutes.
