  1. 1 Uncle Ben's long grain and - wild rice blend

  2. 3 Water

  3. 1/4 cup 49g / 1.7oz Margarine or butter

  4. 1 1/2 cups 355ml Cooking oil

  5. 1 cup 237ml Lemon juice

  6. 3 cups 187g / 6.6oz Tomatoes - fresh, diced

  7. 1 1/2 cups 219g / 7.7oz Green pepper - diced

  8. 1 1/2 cups 219g / 7.7oz Cucumber - pared and diced

  9. 1 cup 237ml Parsley - fresh, finely

  1. Cook rice in water with margarine or butter according to package instructions, for 20 minutes.

  2. Transfer rice and remaining liquid to shallow pan, cover and chill.

  3. Fold in remaining ingredients.

  4. Chill before serving.
