  1. 2 tablespoons chopped fresh cilantro

  2. 2 tablespoons olive oil

  3. 3 large cloves garlic, minced

  4. 2 teaspoons ground cumin

  5. 1 teaspoon paprika

  6. 1/4 teaspoon cayenne pepper Salt and pepper to taste

  7. 1 1/4 pounds boneless beef top sirloin steak, cut 1 inch thick 1 medium red bell pepper, cut into 1-inch pieces

  8. 1 medium onion, cut into 1-inch pieces

  9. 2 cups hot cooked couscous Chopped fresh cilantro for garnish, optional

  1. Preheat broiler. In a medium bowl, combine cilantro, olive oil, garlic, cumin, paprika and cayenne. Season with salt and pepper. Trim fat from steak. Cut steak into 1-inch pieces. Add beef, bell pepper and onion to bowl with seasonings, tossing to coat.

  2. Alternately thread beef and vegetable pieces onto 4 12-inch metal skewers.

  3. Place skewers on rack in broiler pan; broil 3 to 4 inches from heat about 8 minutes for medium rare to medium doneness, turning once. Arrange kebabs on top of hot couscous. Garnish with cilantro, if desired.
