  3. 500 g 1/2 teaspoon 1/4 teaspoon 1 teaspoon 1 teaspoon 1 teaspoon 2 tablespoons Red chili, seeded Lemon grass, bulbous portions only, thinly sliced Garlic, peeled and chopped Chicken pieces Salt Ground white pepper Sugar Annatto seed oil Chicken seasoning powder Cooking oil

  1. : Pound or blend (process) chilies, lemon grass and garlic together until fine. Marinate chicken with one-third of pounded mixture, salt, pepper, sugar, annatto seed oil and chicken seasoning powder for 30 minutes. Heat oil in a wok and stir fry remaining pounded mixture until fragrant and golden brown. Add chicken and stir fry for 10 minutes until chicken is cooked. Stir in 125 ml water and simmer for a further 10 minutes until chicken is tender. Serve with steamed rice
