  1. Black Bean Casserole

  2. (makes 6 servings)

  3. 1 tbsp olive oil

  4. 1 cup chopped onions

  5. 3/4 c. plus

  6. 2 tbsp yellow cornmeal (4 1/2 oz)

  7. 2 tsp chili powder

  8. 1 1/4 c. skim milk

  9. 1 pound can black beans, rinsed and drained

  10. 1 pound can whole kernel corn, drained

  11. 1 pound can stewed tomatoes

  12. 4-ounce can chopped green chilies, drained (I just used jalapenos)

  13. 1/4 c. shredded lowfat Cheddar cheese

  14. 350F. Lightly oil an 8-inch square baking pan or spray with a nonstick cooking spray. In a large bowl, combine all

  15. ingredients, except Cheddar cheese. Mix well. Place in prepared

  16. pan. Sprinkle with Cheddar cheese. Bake uncovered for 45 minutes.
