  1. 2 Fresh lemon grass stalks

  2. 12 Dried red chili peppers - seeded (small)

  3. 1 Fresh galangal - (1" long) - chopped (or 4 slices dried galangal)

  4. 2 Red onions - chopped

  5. 12 Garlic cloves

  6. 2 tablespoons 30ml Coriander seeds

  7. 1 tablespoon 15ml Cardamom seeds

  8. 2 teaspoons 10ml Cumin seeds

  9. 1/2 Cinnamon stick

  10. 1 teaspoon 5ml Cloves

  11. 1 teaspoon 5ml Ground mace

  12. 1 teaspoon 5ml Freshly-grated nutmeg

  13. 1 teaspoon 5ml Whole black peppercorns

  14. 1 teaspoon 5ml Shrimp paste

  15. 4 Bay leaves

  1. Recipe Instructions Remove and discard the outer leaves and upper half of the lemon grass stalks, and chop the bottom half into 1-inch pieces. Soak all the dried ingredients for 30 minutes, or until softened. Place all the ingredients in a food processor, and blend to a smooth paste. Add a little water if necessary to thin. This recipe yields about 1 cup.
