  1. 1 cup chopped onion

  2. 1 cup chopped celery

  3. 2 tablespoons olive oil

  4. 1 teaspoon minced garlic

  5. 2 cans (14-1/2 ounces each ) chicken broth

  6. 2 cups cubed cooked turkey

  7. 1 can (15 ounces) solid-pack pumpkin

  8. 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained

  9. 1/2 teaspoon salt

  10. 1/2 teaspoon dried basil

  11. 1/4 teaspoon pepper Grated Parmesan cheese, optional

  1. In a large saucepan, saute onion and celery in oil until tender. Add the garlic; cook 1 minute longer. Stir in the broth, turkey, pumpkin, beans, salt, basil and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until heated through, stirring occasionally. Serve with cheese if desired. Yield: 8 servings (2 quarts).
