  1. 2 cups maida (all purposr flour)

  2. 1 1/2 cups sugar

  3. 1/2 cup buttermilk or sour curds

  4. A pinch of saffron or other food coloring

  5. Cooking oil for deep frying

  6. 1 tsp warm ghee

  1. Mix together 1 cup of maida and buttermilk to get a smooth batter, Add water if necessary only!

  2. Keep it aside overnight at room temperature.

  3. The next morning, mix in the remaining maida and ghee.

  4. Set aside.

  5. Make a stringy syrup with enough water and the sugar and let it cool.

  6. Add the saffron/food coloring and mix well.

  7. Bring the oil to smoking point.

  8. Pour the batter in concentric circles to get a spriral shaped jalebi.

  9. Fry till crisp and golden brown.

  10. Dip in sugar syrup for about 1/2 a minute and take out.

  11. Serve on a platter, dusted with cardammom powder and powdered sugar.

  12. Leftover jalebis can be refridgerated.
