  1. 3 cans (6 oz./170 grams) skinless boneless sockeye salmon rinsed and well drained

  2. 1 medium carrot peeled and finely grated

  3. 1/3 cup sliced green onion green part only OR chopped chives

  4. 1 cup fresh bread crumbs

  5. 1 large egg beaten

  6. 1 Tbsp. milk

  7. 1/2 tsp. salt

  8. 1/4 tsp. course ground black pepper

  9. 1/4 tsp. dried dill slightly heaping

  1. Place salmon in a medium bowl and flake with a fork. Stir in remaining ingredients until well mixed. Form into 6 patties. Lightly brown in a medium fry pan in a bit of oil for 6 minutes per side over medium heat. Serve with rice or noodles and a white sauce accoumpanied by your favourite vegetable. Yield: serves 6 Notes: One and a half slices of bread, torn into small pieces, pulsed in a small food processor, is the best way to get your fresh bread crumbs.
