  1. 1 lb. Beets; soft cooked, peeled and cut into chunks

  2. 4 oz. Soft tofu; drained

  3. 1 tb Apple cider vinegar (Or more, to taste)

  4. 2 tb Minced shallots

  5. Dry mustard 1/2

  6. Dried thyme 1/2

  7. ts

  8. Dried tarragon

  1. Puree ingredients (using 1 tablespoon vinegar) in a food processor or blender until smooth.

  2. Adjust seasonings, adding more vinegar and salt to taste.

  3. Serve immediately or refrigerate in tightly sealed container for up to 3 days.

  4. Makes about 2 cups.
