  1. 1 lb 454g / 16oz Sweet potatoes - peeled,

  2. And coarsely grated 2 Scallions - finely chopped

  3. 1/2 cup 31g / 1.1oz All-purpose flour - plus

  4. 2 teaspoons 10ml All-purpose flour

  5. 2 teaspoons 10ml Eggs - lightly beaten (large)

  6. 1 teaspoon 5ml Salt

  7. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  8. Vegetable oil - as needed

  1. Stir together potatoes, scallions, flour, eggs, salt, and pepper.

  2. Heat a film of oil in a deep 12-inch non-stick skillet over moderately-high heat until hot but not smoking.

  3. Working in batches of 4, spoon 1/8 cup potato mixture per latke into the oil and flatten to 3-inch diameter with a slotted spatula. Reduce heat to moderate and cook until golden, about 1 1/2 minutes on each side.

  4. Transfer latkes with spatula to paper towels to drain.

  5. This recipe yields 4 to 6 servings.
