  3. 1/2 cup salad oil

  4. 1/4 cup vinegar

  5. 1/4 cup onions -- chopped

  6. 1 teaspoon salt

  7. 1 dash pepper

  8. 2 teaspoons Worcestershire sauce

  9. **beef**

  10. 2 pounds round or chuck roast -- cut in

  11. 1 1/2 "

  12. -- cubes*

  13. 1 cucumber -- cut in

  14. 1/2" slices

  15. fresh mushrooms

  16. cherry tomatoes

  17. metal skewers

  1. Combine all ingredients for marinade. Mix well. Add beef cubes. Let meat marinate at least 2 hours, turning occasionally.

  2. Meanwhile prepare hot coals.

  3. To assemble skewers:

  4. large whole mushroom, 1 cube of beef, 1 slice of cucumber. Repeat. Leave space on end of skewer for cherry tomato.

  5. Can be cooked over coals on a grill or in the broiler.

  6. Place skewers 4 to 5 inches from heat. Cook about 25 minutes. Turn often and baste with marinade. Add tiny ripe tomatoes to end of each skewer for last 5 minutes.
