  12. 2 c Cut-up cooked chicken or Turkey

  13. 1/2 c Coarsely chopped jicama or Water chestnuts

  14. 1/4 c Chopped fresh cilantro or Parsley

  16. Oil or hot sesame oil

  1. Break vermicelli in half.

  2. Cook as directed on package; drain.

  3. Rinse with cold water; drain.

  4. Toss vermicelli, chicken, jicama, cilantro, carrots and cucumber with Ginger Dressing.

  5. Spoon onto salad greens if desired.
