  8. 2 cups fresh rhubarb -- washed/in

  9. 1/2 piece

  10. 1 cup flour

  11. 1/2 cup butter -- softened

  12. 1/3 cup confectioner's sugar

  13. 3 eggs

  14. 1 1/4 cups sugar

  15. 1/4 cup flour

  16. 1 teaspoon baking powder

  17. 1 teaspoon vanilla

  18. 1/4 teaspoon salt

  19. whipped cream

  20. strawberries -- for garnish

  21. Blend flour and softened butter until like coarse crumbs. Add confectioner's

  22. 9 square pan or 10x7x1/2 rectangular pan .Bake

  23. 350 for 15 minutes until golden. When crust is baking, beat eggs. Add

  24. 1/4 cup sugar, very gradually. Beat intul very light and fluffy,

  25. 5 minutes on

  26. High with electric mixer. At low speed, add flour, baking powde,r vanilla and salt. Fold in rhubarb with spatula. Pour over baked crust. Spread evenly.

  27. 350 for 40 minutes until light brown and top feels dry. Serve
