  1. 3 c. flour

  2. 2 c. sugar

  3. 1/2 c. chopped nuts

  4. 2 c. mashed bananas

  5. 2/3 c. vegetable oil

  6. 2 tsp. baking soda

  7. 1 tsp. salt

  8. 1/2 tsp. baking powder

  9. 4 eggs

  1. Heat oven to 350 degrees. Grease bottoms only of 2 loaf pans. Beat all ingredients in a large bowl, scraping the side constantly, until smooth. Pour into pans. Bake until wooden pick inserted in the middle comes out clean, about 50 to 60 minutes. Cool 10 minutes; remove from pans. Cool completely before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
