  1. Hearts of Palm with Tomatoes and Onions (Palmito com Tomates e Cebola)

  2. 4 to 6. 2 Tbs (30 ml) butter or margarine

  3. 2 -3 cloves garlic, finely chopped

  4. 1 large onion, thinly sliced

  5. 2 - 3 large tomatoes, chopped

  6. 15-oz (425 g) can hearts of palm, drained and sliced

  7. Salt and freshly ground pepper to taste

  8. 1/4 cup (60 ml) chopped fresh parsley

  9. 2 Tbs (30 ml) fresh lime juice

  10. Heat the butter in a skillet over moderate heat and saute the garlic

  11. and onion until lightly browned, about 10 minutes. Add the tomatoes,

  12. hearts of palm, salt, and pepper, and saute just until warmed

  13. 3 to 4 minutes. Sprinkle with parsley and lime juice.
