  1. 3/4 cup egg whites (about 6)

  2. 2 3/4 cups sifted flour

  3. 3 tsp baking powder

  4. 1/2 tsp salt

  5. 1 1/2 cups sugar

  6. 3/4 cup Crisco

  7. 1 tsp vanilla

  8. 1/2 tsp almond extract

  9. 1 cup milk In a small bowl of electric mixer, let egg whites warm to room

  10. 1 hour. Meanwhile, preheat oven to

  11. 350 degrees.

  12. Grease and flour two 9-inch layer cake pans. Sift flour with baking

  13. powder and salt, set aside.

  14. At high speed, beat whites until foamy. Gradually beat in 1/2 cup

  15. sugar, beating well after each addition. Beat until soft peaks form

  16. when beater is slowly raised, set aside.

  17. In large bowl of electric mixer, at high speed, cream butter with

  18. rest of sugar and the extracts until light and fluffy. At low speed,

  19. beat in flour mixture (in fourths), alternately with milk (in

  20. thirds), beginning and ending with flour mixture. Beat in egg whites

  21. just until batter is smooth--about 1 minute.

  22. 25 to 30 minutes, or until

  23. surface springs back when gently pressed with fingertip. Cool in

  24. pans 10 minutes. Remove from pans, cool thoroughly on wire racks.

  25. Fill and frost as desired.
