  1. 2 c All-purpose flour*

  2. 1 ts Vanilla

  3. 1 ts Ground nutmeg

  4. 1 ts Ground cloves

  5. 1 ts Ground cinnamon

  6. 1 ts Salt

  7. 1 1/4ts Baking soda

  8. 1/3c Water

  9. 1/2c Vegetable oil

  10. 1 c Chopped nuts

  11. 1 1/4c Sugar (about 3 medium)

  12. 2 c Finely chopped zucchini

  13. 3 Eggs

  1. + Directions : *if using self-rising flour Decrease baking soda to 1/2 ts And omit Salt. Heat oven to 350 degrees. Grease and flour rectangular pan, 13 X 9 X 2 inches. Beat all ingredients on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Bake 45 to 50 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack. Frost with Caramel Frosting if desired.
