  1. 1 cup peanut butter

  2. 1 cup granulated sugar

  3. 1 large egg

  4. 1 tsp vanilla additional granulated sugar

  1. Preheat oven to 325 F. Combine peanut butter, sugar, egg and vanilla until thoroughly blended. Cover and chill in refrigerator for around 15 to 20 minutes. Drop by teaspoonful 2 inches apart onto cookie sheet. Flatten dough with tines of fork dipped in sugar. Bake 14 to 16 minutes, or until lightly browned. Cool on rack. NO FLOUR IN THIS RECIPE IS NOT A MISTAKE! TIP: For chewier cookies, increase number of eggs to two. Flatten dough portions and refrigerate uncovered for 30 minutes before baking.
