  2. ARTICHOKE ZUCCHINI SAUTE

  6. 2 md Artichokes, fresh

  7. 1 tb Garlic, minced

  8. 2 ts Green onions, minced

  9. 2 ts Olive oil

  10. 2 c Zucchini, sliced

  11. 1/4 c Dry white wine

  12. 1 t Thyme

  13. 1/2 c Tomatoes, peeled, seeded &

  14. -- diced Salt & pepper

  15. Prepare artichokes as for the "Artichoke Gondolas"

  16. recipe, but do not steam. When prepared, cut into very thin strips, lengthwise. Saute the artichoke

  17. strips, garlic & green onions in oil in a wok for about 5 minutes, the artichokes ought to be tender.

  18. Add zucchini, wine & thyme & cook until the zucchini

  19. is tender, only another 2 minutes. Add the tomatoes,

  20. salt & pepper & cook until thoroughly heated.
