  5. 12 Jumbo shrimp

  6. 1 qt Corn oil, approx.

  7. 6 Dry red peppers

  8. 1 ts Finely chopped garlic

  9. 2 tb Chopped green onions

  10. 2 tb Soy sauce

  11. 1 1/2 tb Vinegar

  12. 2 tb (level) sugar

  13. 1 ts Sesame oil

  14. --BATTER--

  15. 1 c Flour

  16. 1/2 c Cornstarch

  17. 1 Egg

  18. 1/2 ts Baking powder

  19. Peel and devein shrimp and dry thoroughly. Butterfly

  20. shrimp: split from back but do not cut through. Dip

  21. shrimp in batter. Deep fry shrimp in 2 in. of oil

  22. 3 minutes. Preheat wok or frying pan. Put in

  23. tbs. corn oil and heat. Add peppers, garlic, onions,

  24. soy sauce, vinegar and sugar. Stir. Add fried shrimp.

  25. Baste with sauce. Pour on sesame oil. Serve at once.

  26. Always preheat wok, then add oil. This prevents

  27. additional ingredients from sticking.

  28. BATTER: Mix dry ingredients. Gradually add water

  29. until mixture is consistency of pancake batter.

  30. When preparing the shrimp, use green part of onion as

  31. well as white. The green actually has more flavor.
